Have you ever been to Cuba? And do you know anything about Cuban cuisine? No? In such case, I am about to open a whole new world for you!
The most popular traditional Cuban dish is lobster in chilli sauce! ... No, that's a lie, my dear friends! The only way that Cuban locals would be able to afford buying a lobster is if they worked for two months straight!
Actually, the most popular Cuban dish is rice and beans with chicken. ... No, that's another lie! There is no chance they can afford eating chicken more than once a week, maximum!
The secret to Cuban cuisine is that Cubans have the ability to cook with whatever it is that finds its way to their fridge. And that's exactly what we'll try to do today!
So here's what I have in my fridge:
- risotto rice (I chose brown rice)
- 1 beetroot
- ½ onion
- olive oil
- salt and paper
First of all we need to boil the beetroot and I am going to explain how. Many people are afraid of this, but it is very simple. Just follow the steps and you will get amazing results.
First wash the beetroot properly but don’t peel or cut it just yet. Prepare a pan with water, bring it to a boil and drop the beetroot in. Make sure the water covers the vegetable completely. Cover the pan and let it cook for about 40-50 minutes. When the beetroot is ready soak it in cold water for about 10 minutes, before peeling the skin and chopping it.
So, we have cooked the beetroot, now we can start with our dish.
Put some olive oil in a frying pan and pop it on the hob. Dice half an onion and throw it in the pan. Add the rice and let it take in the flavours of the olive oil and the onion. Turn the heat down a bit, add some water and stir. Check the packet of the rice you’re using to ensure the right cooking time. Toss the sliced beetroot in the mixture and keep cooking and adding water when needed; the technique is the same as when cooking risotto. Add some salt and pepper according to taste and let it simmer for 5 minutes. Decorate the dish.
Your rice will take the colour of the beetroot. So beautiful! And what you get is an amazing, cheap, vegetarian dish! You will love it!
