Today I want to share with you a special dish - Pumpkin Risotto! This dish doesn’t take much time to prepare, only 30 minutes, but the taste is incredible! So much sweetness inside! Ummmm!
I suggest you don't wait, go to the supermarket now, buy the ingredients and start cooking!
- 0,5kg pumpkin
- 150g risotto rice
- ½ onion
- 50g butter
- 50g Parmesan cheese
- olive oil
- And a lot of love and passion!
Let’s put some lovely music on, our white wine goes inside the fridge and we start! We will enjoy it!
Cut your pumpkin in 2 equal halves of about 250-300g. Dice one of the halves into small pieces, put olive oil and salt on top. Mix it! Let it roast at 200 ºC for 10-5 minutes.
We will use the other half of the pumpkin to make delicious stock. Preheat you pan, boil 1 litre of water in a kettle and then put it in the pan with the pumpkin and a pinch of salt. We are going to cook our pumpkin for about 10-12 minutes, until it's soft. We then need to blend the pumpkin to get the perfect stock.
Now we can start cooking the risotto!
Preheat the pan, add 20g of butter and 3-4 table spoons of olive oil inside. Chop ½ onion and put it in too. Let it crisp a little bit. And don’t forget to stir using a wooden spoon. Put rosemary on top.
Now time for 150g of risotto rice! Add it to the mixture in the pan! It smells so good! Add 3 ladles of our amazing stock and mix it in! You see this colour – this tasty orange colour! This is the colour of beauty, this is the colour of great taste!
We need to cook our risotto for 16-18 minutes, depending on the type of risotto rice that you're using. Check the label on the packaging for instructions. Keep stirring the risotto mixture whilst adding the pumpkin stock little by little. It is very important! Don’t leave the dish to simmer!
Add the roasted pumpkin after 10 minutes of cooking.
Take the pan off the hob, take 30g of butter and grated Parmesan cheese and mix it in! Cover the dish and leave it for about 5 minutes. Time to open the wine! Take a sip!
